Sweet Braised Red Cabbage with Apple

After discussing some of the beneficial properties of the cabbage family earlier this month, I wanted to share a great recipe for the holiday season. This flavorful and healthy side dish pairs well with duck or goose.

You may choose to adjust or add your own seasoning.

Sweet Braised Red Cabbage With Apple and Cinnamon

Ingredients
1 tbsp vegetable oil
1 red cabbage, cored and thinly sliced
3 apples, peeled, cored & sliced
1/4 cup (50 ml) red wine
1/4 cup (50 ml) apple cider vinegar
3 tbsp brown sugar
1/4 tsp ground nutmeg
1/4 tsp allspice
1 tsp cinnamon
a little bit of lemon juice
Salt and pepper to taste

Directions
Use a large saucepan, heat oil over medium heat and add cabbage, steam for a couple minutes, then add apples, wine, vinegar, sugar, nutmeg, allspice, and cinnamon. Simmer until tender, stirring often, for about 20 minutes. Season to taste with salt and pepper and add lemon juice on the end.
